Paleo Coconut Shrimp Recipe

If you love coconut and shrimp then for you this recipe is to die for!

There’s nothing like coconut shrimp dipped in a little cilantro lime ranch dressing in the summertime while sipping a margarita and listening to an island band overlooking the ocean.

Or you could just eat them in your kitchen with reruns of Friends on TV in the background.

Paleo Coconut Shrimp

Serves: 4

Prep Time: 10 min

Cook Time: 15 min


  1. 1 ½ pound large shrimp, peeled and deveined
  2. 2 eggs
  3. ¼ tsp black pepper
  4. ½ tsp salt
  5. 2 cups unsweetened shredded coconut
  6. coconut oil for frying


  1. In a shallow bowl, beat the eggs with salt and black pepper and set aside.
  2. Place the shredded coconut in a plate.
  3. Dip each shrimp in the eggs then press in the shredded coconut.
  4. Pour the coconut oil to depth of 1/2 inch in a large skillet and heat it over medium-high heat.
  5. Fry the shrimp in batches until golden brown, about 3-4 minutes per batch.
  6. Serve with your favorite sauce.
