Paleo Desserts – Chocolate Almond Butter Fudgesicle (with Kale)

Since it’s been so hot so far this summer, this has quickly become one of my favorite Paleo desserts.

It’s cold, chocolatey, nut buttery goodness.

Funny, though, because I only thought of it this morning while I was making a sneaky green smoothie for breakfast.

If you know me, you know I love smoothies. Further, you know I love hiding leafy greens in them.

Why?

Because you can’t taste them! You get all the amazing nutrition from the greens but the other smoothie ingredients overpower them.

Win -win!

So, I’m in the kitchen whippin’ up one of my old smoothie favs and I suddenly remembered how I just bought one of those plastic popsicle makers. You know, the kind where you just pour some liquid into them, stick in the handle and put them in the freezer for a few hours? See pic if you need a little clarification.

So, instead of slurping down my entire smoothie, I poured some into two of the popsicle wells. Why not all four? Because I didn’t want to waste the smoothie if the fudgesicles didn’t work out. And I was hungry!

Anyway, I threw them in the freezer and forgot about them – until….

About 3 pm when I start to get that “I don’t feel like working any more, maybe I’m hungry, where’s the chocolate” feeling.

Sound familiar?

So, I went back to check out my concoction. After a little finagling of the thing to actually get the fudgesicle out of the mold, I finally got to taste my snack.

Awesome!

I will definitely be turning my morning smoothies into fun Paleo desserts for later on in the day when I need a treat.

Here’s the particular recipe I used this morning, which you see in the pic above.

Paleo Desserts – Chocolate Almond Butter Fudgesicle (with Kale)

  • 1 cup unsweetened almond milk
  • 1 handful of kale
  • 1 scoop chocolate protein powder (I use this one)
  • 1 spoonful almond butter
  • 1 handful of ice cubes

Blend ingredients in a blender until smooth.

Next, pour the smoothie into a popsicle mold and insert handles.

Freeze for 12 hours and enjoy!

While there’s a lot of creative Paleo and low carb recipes out there, I thought this one was pretty creative. Not too many awesome tasting, chocolaty desserts coming out of the freezer that isn’t ice cream and that have a salad inside them!

  • Intriguing. I don’t do whey or casein, but I could just swap out the protein powder for cocoa and stevia, and maybe throw in some avocado for good measure!
